A food science programme last night claimed that castoreum, a secretion from the anal glands of beavers used for scent marking, is an additive in food due to it's resemblance to vanilla.

It can be found in ice cream, cakes, drinks and sweets. Look out for 'natural flavourings' in the ingredients. I hasten to add that the majority of the food industry denies this.

It's also used in medicine (one component is salicylic acid), perfumes and cosmetics. Lovely.

It's use goes back thousands of years. Traditionally it's also used in Sweden to flavour schnapps, known as Baverhojt (beaver shout) probably after the noise the beaver makes while it's being harvested. You heard it here first.
