I've got a big white cabbage (BWC) that I need to do something with.

Any suggestions?

Durham Tees

Braise some in a covered dish, with a little Balsamic Vinegar and water and a sprinkle of nutmeg.

Par boil the potatoes for about 7 mins (not completely boil), crush them with a fork rather than mashing them. Add the cabbage (chopped, works best if cooked/steamed first) mix together, into a frying pan with hot oil and leave to get good and crispy surface before being tempted to mix it around. When nice and crispy underneath, flip in the pan and repeat.

It makes a change from steamed cabbage. No need to overdo the Balsamic, a dessert spoonful in a couple of spoons of water should be enough for 1-2 people. Cook for 20 mins or slightly longer, depending on how soft you like your cabbage.
