Salmon baked with a small knob of butter (not marge) and a very light sprinkling of paprika (wrap in foil when baking with a tiny gap for steam to escape) then serve with new potatoes and petit pois.

Quick and Delicious

Bristol

I like to knock up a wholewheat spaghetti with spring onions, prawns, lemon juice, garlic, chilli flakes and parsley. Proper comfort food, proper quick to cook. Another quick one is to mash up some smoked mackerel with mayo, capers, French mustard and gherkins and shove it on a baked spud. Lush. But if it's really good fresh fish then a fish stew with butter beans and heavy on the smoked chipotle is a treat.

I fish a lot and here's my top 5 favourite catch to cook.I prefer it whole on the bone.Unless it won't fit in oven or pan

1 sea bream lovely baked or fried a really meaty fish similar to snapper.

2 sea bass has lovely white flesh takes on seasoning well like garlic salt and lemon bake it fry.

3 sea trout better than salmon pink flesh very delicate not much seasoning.

4 mackerel BBQ it or grill blacken the skin.

5 hake filets nice and meaty pan fry lots of seasoning
