They went over there for a couple of months. I stayed with my grandparents. My mum didn't like Buffalo, so we didn't go. My mum doesn't like winter, and Buffalo can really do winter. |

Pickled Walnuts
Made with green walnuts picked in June before they are ripe and before they have formed a hard shell. Pickled Walnuts are a real treat, spicy and nutty they go well with most cheese or cooked meat. They are expensive to buy and so taste even better if you have made them yourself.
A straight forward recipe that is easy to do but takes some time.
Preparation Time:
10 minutes - wash and pick over the nuts.
Cooking Time:
3 weeks to mature in brine plus 10 minutes cooking time.
Ingredients:
1 kg of green walnuts
1 lt malt vinegar
Pickling spice - 2 star anise, 1 cinnamon stick, 5 cloves, 1 tsp of peppercorns, 1 small chilli and a small piece of root ginger
100 gm soft brown sugar
750 gm cooking salt
Method:
Use green walnuts picked from the tree in June. Test the walnuts to make sure they are soft, do this by sticking a darning needle into them, if the needle sticks because the shell has started to form discard them.
Put the green walnuts into a large old pan or casserole dish (they start to turn black in the brining process and this can stain enamel and pottery) and cover with brine - made with 150 grams of salt and 500ml of cold water. Cover the pot and leave in a cool place for 3 days.
Drain the walnuts and repeat the process with the brine - you will notice that the walnuts float and the tops that poke out of the brine have turned black.
Carry on changing the brine every 3 days for a couple of weeks.
Drain and rinse the walnuts - set aside on a tray covered in kitchen roll for 1 or 2 days untill the walnuts are dry.
The walnuts will now have turned completely black.
Preheat the oven to its lowest setting. To sterilise the jars and lids, clean and upturn them – lids off – on a baking sheet. Put in the oven for 15 minutes.
Put all the spices and the sugar into a pan with the vinegar and bring to the boil.
take the jars out of the oven and carefully fill with the walnuts.
cover with the hot vinegar mixture and screw the lids on to seal the jars.
Tips:
Leave in a cupboard for 2 months to mature before opening.
Store this pickle unopened for 1 year and refrigerate once opened.
