The same reason why dogs chase cars they will never drive..........
The unattainable is attractive, it tests us, human nature is animalistic, love is a "nice" word for something more base.......
Love actually doesn't exist, compassion, empathy etc. Are easy to describe yet love isn't, primarily because it is a composite emotion (I.e. It is an amalgamation of other needs, desires, wants, and instincts)
