I take my roasts very seriously. I can do beef now as well, trick is putting water in the tray with the joint. Pork I can do easy and make lovely cracklings, chicken was my first meat so I've got that down easily, I just sprinkle aromat on it for an extra kick. Roasties are par boiled, shaken and fluffed, with a sprinkle of plain flour and then goose fat or beef dripping according to the meat. Gravy, bang on, roast parsnips on point, homemade yorkshires now, no need for aunt Bessie frozen jobbies, I make the batter the night before to leave it stand.
Very seriously I take my Sunday dinners. |

Sprinkle salt and black pepper on your roasts before they go in the oven. Never tried flour but I will do next time

It would be regular, I don't think that body could be fully enjoyed just the once.
However let's get down to real business here, a chicken and duck roast and Yorkshire puddings (high and fluffy) with roast sweet potatoes cooked in goose fat, some haggis, bread sauce, carrots, broccoli, cauliflower, gravy made from the meat juices and maybe some pigs in blankets as extras |
