In our group there is a nearly veggie.
Drives me mad every time it's my turn to cater.
She will eat chicken and fish. Im fed up of always catering for this and not doing the rest of us other dishes.
What is tasty. Easy and looks good that I could do separately for her.
Believe me i've looked at lots of veggie recipes and they all seem bland. |

Loads of great veggie meals; it's all in the herbs and spices.
Veggie Mousaka is quick and easy to make. Rissoto (not mushroom) is good; asparagus and pistachio is a favourite in my family.

Moussaka is not quick or easy. It's not difficult but without the meat ....... why ? why would i make moussaka without meat. |

What are you planning on making everyone else? Have you looked in the chilled aisle at quorn stuff?

Tagine full of flavour and veggies and you just don't put the meat on her plate. Or rissotto is winner we have this issue everytime we feed the inlaws as they are vegetarian. Rissotto does seem a winner and you get to enjoy a glass of wine in the cooking process |

Butternut squash and black bean chilli.
Simple, one pot, and tastes awesome for meat eaters and veggies alike.
Made it for a group of friends a couple nights ago, all of whom are meat eaters, (myself being the bloody awkward veggie) and I think I was the only one who didn’t have a second helping.
Catering for veggies is actually REALLY simple these days. |

I put that emoticon because if my 80 year old father than cook for me every other Sunday (while dealing with everyone else's food likes and dislikes), you can put a bit of effort in for your friend!

how about a beef casserole?
Make it without the beef and then split it. Put chunks of veggie sausages in ( not those crap McCartney things) jaz it up with some extra flavour. Mustard, wine, even some marmite. |

I'm a veggie and I like fresh food. And since fresh food doesn't need to be cooked, it's relatively easy. Tabouli salads with lentils; Fattoush salad is delicious; if you're up for a bit of cooking you can do a fancy veggie burger with guacamole and a fancy salad on the side that everyone can have as a side dish. |

I made pizza dough and had the bases ready with passata covering them and laid out bowls of toppings and got everyone to decorate their own pizza and then threw them in the oven, when I had a similar mixed catering scenario. |

Tacos with all the trimmings then offer one meat filling, one veggie combo filling (roast squash and feta/wilted finely chopped greens with fromage frais and tarragon) or smoked mackerel from a packet shreddded with a fork. Chipotle mayo goes with everything. |

I didn't say you had, but too many of us including the fellow I'm replying to know the near-yet-so-far vegetarians. Typically they wants the morality claim but meat is delicious so...
I respect real vegetarians for having willpower and I can understand the moral qualms in some ways but most people can't stick to it. I try avoiding meat a day or two in the week for the sake of balance as we do typically eat too much of it.
Fortunately those meat substitutes like Impossible Burger are getting good. Not a fan of Quorn though, it absorbs the tang of my cast iron metal skillet in a way genuine beef mince does not. |

If you are making steak and kidney pie, and are making it from scratch, just use a bit of the pastry to make a veggie tart- there a millions of easy toppings you could use. Or stick a premade something in the oven and serve with the same sides as everyone else. Try crispy chicken or an inspirations fish portion or an individual nut roast. Or by her an individual pie with a filling she would like.
I can't think of anything more bland and horrid than steak and kidney pie, I would rather eat veggie than that!
I have a vegan friend and I really enjoy trying new recipes when she comes round because it's an excuse to try something different I don't do very often. Sometimes I will do something saucy like a veggie curry, or italian style tomato and aubergine ratatouille then serve it with the meat on the side for the meat eaters. |

On your original question though, I'd make some pizzas (with fresh bases from the shop), then some would be meat, others veg, but even if you have leftovers homemade pizza is so delicious that nothing will be wasted.
I don't know how to make proper bases, I get those fresh from a store - but I advise you to buy some:
Fresh basil/organeo.
Punnets of Cherry Tomatoes.
Garlic cloves.
Red Onion
Olive oil.
Salt.
Pop it all into the blender and you have the best possible pizza sauce, it makes a huge difference. Good for saving into other projects too. |

The couple whose wedding it was was absolutely fuming with the caterers afterwards. They had no idea that they were going to serve fish to the veggies. |
