One chef put a load of water in the frying pan to start with - that can't work surely? ?

If you mean bacon

Or do you mean like the crispy bits on chicken like the skin

Bacon just fry it

Chicken or other roasts plenty of oil and sprinkle with salt

Dry cure bacon cooks best as it doesn't have loads of water in it.

The best, but it doesn't have that 'shatter when you bite' crispness when grilled or fried normally.

Or put it in the oven... and watch through the little window until it looks done.

Went to Sainsbury's online to check the name of the one im buying right now but their site is down.

Generally i'll buy any dry cure crispy from any supermarket and it's crisp up and cracks like thin salty brittle !

Heat pan, grease pan, put bacon in,watch it go pppfizzzle and flash white, turn it over, done, eat.

Grilling and ovening renders a totally different flavour and texture. Not to mention the time and cost factor.

I havn't tried baking it in the oven, other than on the turkey at xmas, that goes pretty crisp but I don't have four hours lol.

I used the best dry cured smoked back but grilling or frying only ever gets the odd edge crisp, and just starts to burn the meat of you leave it longer.

Maybe the chef was right. ..or maybe it only really works with streaky. ....

I put it in a frying pan and leave it to fry slowly so the natural fat comes out and flavours it, low and slow and then you can get as crispy as you like without it ending up burnt

Yeah I've just looked at a bunch of videos on utube and they all say to cook slower so I'm going to try that Ave the water method ( which would effectively slow it down I guess). I will report back lol!

Well yeah... isn't it the fat that makes it go crispy?. The meaty bit just goes like cardboard if you try to crisp up normal bacon.

I no the filling i hate electric grills to.

Do you have a chip fryer ? If you dep fry bacon it comes out crisp all over and i meen crisp

We buy all our meat from the local butcher, who smokes all his own meat,cheese and fish including the bacon which is just divine. His sausages are gorgeous and all meat is matured and locally sourced. I would never buy supermarket meat as its tasteless and full of water. Crispy streaky bacon is awesome, but gave to watch the figure.

The meat flavours are rarely made with any kind of animal products anyway.. Pot noodle for example has no meat in them.

Nope - had free range, air dried, beech smoked streaky cooked in a pre-heated non-stick cast iron Le Creuset on a medium heat and I'm still not happy lol!

As I stood and turned it frequently had a feeling the thermostat on the hob is doing strange things, so maybe that's the problem......
