"Butter and grated cheese"

+1 - and it has to have really crispy, crunchy skin

OK Take a seat, this could take some time... Nah! Only kidding!

Bake potato in the oven (NOT microwave!) until soft inside. Remove from the oven and leave to cool for 15 minutes.

Cut in half and scoop out all of the potato flesh and return the skins to the now off, but still hot oven to keep crisp or to clisp up.

With the flesh in a bowl, mash with butter, milk and 100grm (4oz) of grated cheese per potato. Also mix in some seasoning and/or Worcester sauce and a beaten egg. (You can also add ham, corned beef or other filling as well as or instead of the cheese, just pick your favourite mix!)

Re-fill the potato skins with the mixture and overfill to use it all up. Relight the oven and return to the oven for 30 minutes at about 190 degrees. If you are like me and a cheese lover, lay a slice of cheese on top of each potato half about ten minutes from the end of cooking or maybe some sliced raw onion. Perhaps even some bacon!..

Deliver to the plate and forget to tell anyone else they are ready.. Scoff the lot!

What I don't like are baked potatoes that are just cut and then a mess dolloped on top.. They need to be a culinary delight!

birmingham

A couple of suggestions, baked in the oven, scooped out and mashed with butter, cheese and bacon, stuffed back into the skins and grated cheese over the top then back in the oven on high till golden brown.

Or, two halves, slice of corned beef on each one, followed by a slide of cheese, then thin slice of tomato and finished off under the grill

Yummy
