Roasting tray, goose fat and some water season it foil over the top and stick it in the oven....I don't like mine dry that's why I add water just keeps the meat moist.xxx |

Always cook it the day before, typical roasting method. Then at same time as yorkies go in oven place slices inside tin foil parcel with butter, splash white wine, lemon and sprig of thyme, come out moist as a maid on her wedding night! |

I put mine in a tray, put some bacon on top and cover with Brian foil, then cook it for a bit extra time, as I like it well cooked. I don't use oil or anything.XXX |

Dress it however you want and stuff it with whatever you enjoy, but I would cook it under foil (basting every 30-45 mins) and then leave it unwrapped for the last third of the cooking time so that the skin colours and goes nice and crispy |

Given the trends in cooking over the couple of years I'm surprised no one has said in a Ziploc bag in mildly warm pan of water for 24h.
Personally I'm doing duck rather than turkey so wI'll go for a open roast in a pan over onions and some water. Followed by a test of the pyrolysis cleaning on the new oven and no doubt a smoke locked house on Boxing day. |
