If people/companies are too scared to say Merry Christmas, they often say "season's greetings". I found it written on a pack of cheese the other day.

But why do they only offer you "season's greetings" in winter? Why not spring or summer or autumn?

Because as you just said, they’re actually saying Merry Christmas and that only happens in winter.
