The online thing shows everyone as still being "online" for 5 mins after they go off. I guess it's so that people who are dipping between several things on their phone don't keep looking like they're on/off/on/off... So it only shows you as offline if you've been off for more than 5 mins!
As you say though - means it's easy to compose a message to someone who looks to be online, only to find as you send it that they've gone....
