anyone know of some good ways of cooking fish? normaly put it in kitchen foil bit of red wine butter, slice of lemon and little salt and pepper and parsley then bake it in the oven, or just cover in a little flour salt pepper and fry it, both taste really good but would like to try something new....... any ideas? |

You can do all sorts of things... How about Chinese style - lay the fish in tin foil, add some fresh ginger, chili, spring onions, coriander, a bit of soy sauce and a squeeze of lime juice. Seal up the foil and bake in the oven - lovely with some rice and pak choi. You can curry it, make a fish stew etc etc! Hope you enjoy whatever you do! I'm having salmon roasted with mediterranean veg... Yum! |

Covered with batter and fried in beef dripping then placed alongside a lovely bag of chips, soaked in vinegar with a touch of salt and wrapped in last nights Evening Chronicle.

Lightly grease foil to prevent sticking, place fish on foil add salt, white pepper, chopped yellow and green peppers, chopped red chilli, chopped red onion, lemon juices, white wine.
Seal into parcel, place in pre-heated oven for 45 minutes.
If you don't want to add wine replace with knob of butter and splash of cider vinegar. |

This is a great recipe for salmon:
Slice the fish into 3 inch segments and flash fry them no more than a minute each side.
Place each segment on a bed of rocket or Italian Salad (you can get a bag of it in Sainsburys).
Drizzle some fresh lemon juice over the fish and top with a poached egg.
Salt & pepper to taste.

Carefully walk to bin and chuck in

I like Thai steamed. I marinate salmon in a mixture of Thai Tom Yum paste (available from Tesco Extra) mixed with a dash of fish sauce and dash of lime juice for 20 mins. Steam it in the top of a bamboo steamer with Bok Choi cut in half in the bottom. Steam it for 7-8 mins and serve both drizled with raw marinate and Basmati rice.
Nice fresh taste for Summer. |

Cut new potatoes in quarters, drizzle with olive and and place in rasting tin/pyres dish and cook at 190 degrees (sorry don;t know gas equiv) until par cooked.
Add either shallots or chunkily chopped onion and cook for 10 to 15 mins until just cooked. add salmon or any other chunky white fish fillets, and baby plum or vine tomatoes and chunks of lemon, bake until fish cooked to your preference |

Just noticed that my recipie is similar to the Chinese version. Thom Yum paste contains Galangal rather than Ginger so is a more rounded taste.
Oh, I nearly forgot. I add some fresh coriander leaf and stalks to the marinate. |
