just had dippy egg n soilders for lunch but my bloody egg wasn't dippy
any one got any good tips for the perfect egg?
thinking bout getting one of those indicator thingies you put in the pan that tells you when its just how ya like it, anyone got one? is it any good? |

Eggs do last longer if kept refridgerated but also require longer cooking times.
5 minutes for a runny egg (not snotty) if it's been refridgerated.
You can poach them by boiling some water and then reduce it to simmering and stir the water quite vigourly so you create a well in the middle. Plop the egg smack bang in the centre of the well and simmer it for a couple of minutes.
Add a dash of white wine vinegar (or normal table vinegar in you don't have w/wine vin.) as this helps the egg white to bind and you get a nicely rounded poached egg.
When it's done, lift it out with a ladle and trim off any straggly bits of egg white.
Plonk it on top of a flash griddled piece of salmon (1 min each side, no more), and serve with some rocket and a drizzle of fresh lemon for a perfect summer lunch. |
