quite a bit of roast chicken left over this week and usually bother using it for Chicken & Chips on a Monday night. Have on occasions made vol-au-vans but can't make curry as Sarah not into spicy food..
what other suggestions would the panel have for left over chicken? |

Chop spring onion and cucumber chop the chicken into small bite size pieces place in a bowl with chopped hard boiled egg (optional) mix with enough mayonaise to cover, then fill little gem lettuce leaves with mixture, serve with jacket potatoe and fresh warm crusty bread. |

In this weather, a nice cold chicken salad with french dressing, some croutons and a side bowl of olives, all served out on the deck with a long cool Pimms. |

Chicken Paella.
Add Onion, Garlic, Mushroom, (any other bits you've got hanging around.
6 oz of long grain rice (serves 2)
150ml - 200ml of Chicken or Veg stock
dried basil or Oregano
3 tomatoes chopped (or small can of chopped toms)
In a large pan.
Stir fry the Onion and garlic in Olive Oil
add any other veg etc.
Add the tomatoes (if using)
Add the rice and stir to coat with oil
Add the canned tomatoes (if using)
Add the Stock & dried herbs
Simmer for 20 - 30 minutes covered until the stock is obsorbed.
Add the shredded roast chicken. Heat through.
Serve.

Firstly put some cornflour, salt and pepper into a bowl. Dip chicken in egg and into the cornflower mix and gently fry until crispy. Serve with mayo, salad and wraps. You can add any herbs or spices to the cornflour/salt/pepper mix..X |
