Had a traditional Monday.

Roast chicken, buttery mashed potatoes, gravy from meat juice's and oven roasted garlic, onions, carrots and butternut squash mmm was delicious...in a food coma

Saw a super easy recipe for fajitas...sheet pan fajitas. Bung everything in the oven together and that's it. And you get a nice salsa to go with it too! Better turn out nice or I won't be happy.
