My best work friend is Nigerian and always made me deep fried plantain on a Sunday.

He's on long term sick now and I text him every Sunday he's not here to remind him how much I miss him. And his deep fried plantain.

It depends on whether you have them green and boiled or really ripe and fried.

Fried is my favourite as it's very sweet but without the banana top note.

Boiled is more like having a cross between a banana and a potato.

I made a slow roasted soup last night and let it sit for a day.

Served hot with grated parmesan snd a huge wedge of cheese on toast made of an olive ciabatta.

Takeaway not needed here
