It works brilliantly in any summer fruit tart. If I hadn't spent all weekend baking cakes and bread, is make one now just because you've put the idea in my head. |

Sorry not suggestions for making plum tart but I have made plum wine before (which some people get good results with) but I wouldn't recommend the recipe I used as the wine wasn't that great. Have you considered preserving some in brandy as this is another traditional use for a glut of plums? |

Yes.
Plum Tarte tatin
Sugar in a frying pan. Heat until it starts to go golden. Place in halved plums, flat side down. Add a splash of something nice like cherry brandy. Cover with pastry, push the edge down. Whack in oven for 45 mins @ 160
Turn out on plate
