Is it possible to use 2 iphones sharing the same itunes and icloud ID without them somehow being linked so messages etc get shared between the 2?

Yes

Turn off messages in iCloud under general settings / iCloud

They are, i get my texts on my ipad too in imessages, but you can turn this off in settings.
