250g self raising flour
2 teaspoons ground cinnamon
400g caster sugar
4 eggs
350ml grated carrots
120g chopped walnuts
Icing..
225g cream cheese
110g marg (soft)
450g icing sugar
120g chopped walnuts
1 teaspoon vanilla extract
Preheat oven to 180c/ gas mark 4
Grease two cake tins (23cm round is good)
In a large bowl stir together the flour, cinnamon and sugar, add oil and eggs and mix, then stir in carrots and nuts. Divide the cake mix evenly between the two tins
Bake for half hour (you know the skewer trick) cool before removing from tins
Icing...cream together the butter and cream cheese add sugar and cream, stir in the nuts and vanilla and spread on top..
