watching tom kerridge on bbc2 and he cooked a roast chicken 'simply'....his words....so ho did he do it?

got a chicken, wrapped it in a muslin cloth, put it in a pot on a bed of hay, packed hay around the edge then poured cider in and popped it in the oven.

then when it came out he blow torched the skin to crisp it up, mae a glaze by reducing the cooking stock and brushed it over the bird

looked amazing but i think his version of simple cooking is different to mine put in pan, crumble chicken oxo on it, put in oven, cook, eat.....simple

I put potatoes carrots and meat all in a tray cover with foil and cook. Hardly any washing up either

I throw a chicken in my slow cooker at 10am, leave it til fiveish and then serve.

Should be getting my anova precision cooker in a few weeks.

Gonna try out sous vide cooking.

Trying to decide if its worth investing in a torch/searsall for finishing or just use a skillet.
