So a jar of jam is ok stored in the cupboard unopened.. after I open it it needs to be refrigerated.
Why..?

Because if it's industrially made when it's packaged they will suck all the oxygen out to create a vacuum (hence why it's difficult to get the lid off)...
A traditional jam, sealed in an air-tight container, will last almost forever. Opened, it starts becoming subject to contamination by airborne bacteria and fungi. The sugar content in traditional jams is high enough to prevent nearly all bacteria from growing. It is not high enough to prevent fungal growth, though.
Once a traditional jam is opened, fungus will start to grow on it, sooner or later. If you eat it fast enough, it'll be gone before the fungus gets a chance to grow much. If kept in a refrigerator, growth will be slowed, but not stopped. Depending on how fast it's consumed, it may be gone before fungus has a chance to really grow to a noticeable level. If not, you'll find mold growing on it.

Like most things, stick it in the fridge and it'll last longer. I wouldn't dream of keeping unopened jam in the cupboard. Other than cereals, I actually can't eat anything that's been opened for any length of time and left out at room temperature. |

Things that are acidic don't grow bacteria easily on them.
When you use chlorine in a swimming pool you not only kill bacteria but you also change the neutral ph value meaning you stop the bacteria coming back as fast!.
.
If you check most bottled water on a litmus you'll notice there mostly acidic by nature |

Butter is nearly all fat,meaning it hardly spoils by the fat/sugar route it just goes off by taste by oxidising |
