There have been a couple of beach socials in south Wales, which seemed to be quite popular, so I guess in the words of whatsisface "If you plan it, they will come".

Whats the worst that could happen... no-one turns up, so what.... you still have a day on the beach.

I've not been to Brighton in ages. But they also have What Katie Did and an Irregular Choice shop down there so it sounds like a fine idea and the opportunity to make a weekend of it.
