I'm having jacket potato, and half of it I scooped out the middle... Mashed it with a tablespoon of Philadelphia light and cut up a piece of bacon medallion and then cooked it again for a bit longer... Serving it with a grilled chicken breast ( no skin) and salad. Have sugar free jelly and fruit with a spoon of cream for my pudding x |

Belly pork marinated in a smoked peach mustard and honey. Sweet potato mash with toasted cumin seeds and sauteed shallots and peppers. Got some asparagus that needs cooking too...drizzle of olive oil, salt, pepper and grill. |

Bulk cooking some chicken thighs too. Tamarind, molasses, honey and chilli.
And a bowl of rocket, baby leaf salad with red onion, chilli and pomegranate. .. |

Home made crispy cod fish cakes with minted pea and parsley purée in the centre.
Sweet potato mash and lemon wilted spinach really fancied it this morning when I made them now not so much

Tonight i cooked homemade lamb kofta kebabs, falafel, cous cous, homemade pita bread, homemade hummus, tomato cucumber and coriander salad and homemade Greek yogurt dressing....i didn't get a lot of work done today |
