... it was last Christmas, as that WAS perfect! Gravy recipe please Wishy!!!"
10 chicken wings
2 rashers smoked bacon, chopped
2 large carrots
2 sticks of celery
2 large onions
6 sage leaves
2 bay leaves
2 sprigs of rosemary
1 star anise
good pinch of sea salt
good pinch of black pepper
~
* rough chop the carrots, celery and onion and place in roasting tin.
* crack the bones of the chicken wings with a heavy knife and place on top of the chopped vegetables with the chopped bacon.
* add the herbs, salt & pepper and roast the whole thing for an hour at 200c.

* remove from oven and place on hob (on maximum heat)
* mash the vegetables and chicken wings with a masher and add two tblsps of plain flour for each pint of gravy you wish to make.
* add enough water to cover everything and stir thoroughly.
* simmer for 20 mins topping up water as neccessary and mashing occasionally to release the flavours.
* when it has darkened in colour, remove from hob and strain/sieve.
** tip: make your gravy BEFORE Xmas Day and freeze it, as you simply won't have enough time to do it on the day.
* when you want to use it, defrost thoroughly and add the juices from the turkey (drain off the fat though), and for an extra twang mix in 2 dessert spoons of cranberry jelly.

It sounds like a faff but trust me it's well worth the effort and when you're roasting it, it gives off a really Christmassy aroma!!

I won't do those types of gravy .. Waste of chicken wings, bacon and veg.
Roast your meat.
Strain off juices.
Thicken with cornflour
Thin with veg stock that's cooked for dinner
Taste and season
Gravy is a two minute finaliser not a separate dish .....pffffffft Jamie Oliver is all my arse. |

It went down well with everyone last year and ma-in-law has asked me to fetch some over this year, so it must have been enjoyed.
