Have a big un
As in xmas dinner.
Ive decided im gonna do the works...
canapes...or for the posh..."horses dubries"

pssst.. a surefire winner for xmas dessert is an Eton Mess.
Whipped cream enfused with broken meringue (but add the broken meringue just before you're about to plate up or the cream dissolves it). Top the cream/meringue with strawbs/black/blue berries and drizzle a blackcurrant coulis over the top.
It's proper Christmassy! Divine!! |

Don't like meringues... surefire winner for me is cheesecake and since its only me I have to please, I'll go with that!

On 25 Dec:
Canepes: bite size biscuits with a dill sauce made with creme fraiche, fromage frais and Dijon mustard, topped with either lumpfish roes or smoked salmon.
Starter: baked mini brie with garlic ciabatta, red current jelly and rocket.
Main: Oriental-inspired roast duck with a garlicky plum sauce, roast parsnip and potato, and stir-fried vegetable.
Dessert: Golden syrup pudding (the only item not made by myself) with lashing of double cream, or I may make a creme brulee instead.
Drinks: Bucks Fizz the moment I get up, made with Asti Spumante as I do not like champagne, and the best OJ I can get; lots of red wine, Snowballs, and Famous Grouse and Lemonade
Got a nice piece of Rib-eye steak for Boxing Day!
Then duck fried rice on 27 Dec, and spicy duck noodle soup on 28 Dec!
Cook feast here I come! |

Am doing a veggie option this year which my mates love. try this one
Aubergine
Lemon
Garlic
Olive oil
Salt
Pepper
Bread (for toasting)
Super simple, super quick and super tasting. Eat as a starter or light dish spread on hot buttered toast
Method
Roast 2 aubergines at 200 for 45 mins
Allow to cool
Peel them and cut them roughly into a bowl - big chunks about the size of dice
Add 3 cloves of crushed garlic
Juice from 1 lemon
Good splash of olive oil
Salt and pepper to taste
Mix the whole lot with a fork being careful not to over mix it. You don't want it too mushy.
Chill it in the fridge for one hour - this is important - it must be cold
Serve with chunky slices of toasted granary bread with butter

We're going up to my Mums.
There won't be a starter but the main (turkey and beef with all the trimmings) will be HUGE.
For pud it will be whatever we fancy... traditional christmas pudding, chocolate and cherry christmas pudding, mince pies, chocolates... whatever everyone fancies. |
