Easy!
Fresh plum tomatoes sauted and softened in olive oil along with a little onion.
Throw in some black olives, black pepper and balsamic.
toss in some al dente pasta ( very little ) and enjoy .

I can make pasta, I don't mean boil it I mean from scratch was always my job as a kid to make the pasta, when I told my ex that he actually thought pasta grew and didn't believe me you had to make it |

I can get it from word go to plate in 8 minutes.
Tip for those trying it out...
Keep the toms moving so they don't spit too much.
Squash a little with a masher ( don't mash just crack. The juices form the sauce )
Use a tin of ready sliced olives from ASDA.... cheap n cheerful at about 37p. |

As plow pole have said, each region is very unique.
I love parmigiana: layered up like lasagne but with aubergine slices and a slow cooked sauce and mozzarella.
Tortellini in broth from Bologna is great too.
However, Italian street food is amazing. Proper focaccia from Genoa, arrancini from Palermo...

Spent about 2 months in Italy last year and what I enjoyed most is just the simple stuff. A good peice of meat with grilled veg, or a really good bowl of pasta. But the pizzas, propper ones! Oh my god! No wonder I put a stone on during my last trip! |

Just remembered bacala. God I ate so much of that. And various fish carpaccio. And the rabbit, and the veal and the procuito. But it still the pizza. And the wine. |
