No no, I love the cheese in the UK (even the cheddar ) Its just that cheese fries in the US have nacho cheese on them, which is cheddar mixed with other soft cheeses or something. So it stays all melty and gooey on the chips. So I prefer it over melted cheddar on my chips

salad cream or red sauce if im in a certain mood id put red and brown sauce over them

laced with vinegar as dont like salt

bbq sauce

cheesy chips

gravy

have been known to raid the sauces out of the tins and pour that over them

Salt and pickled onion vinegar. Then a condiment if I feel the need, usually ketchup or curry sauce. Unless I'm in Canada. Then it has to be the joy that is poutine, which is chips with cheese curds and gravy. So good!

I'm more of a dipper. So, i'd place in the corner some chilli sauce. That's all I really have. That and some chutney sauce. Bit of salt and pepper too. But, not a fan of all this ketchup and mayonnaise.

Instead of vinegar try a little Worcester sauce and if your having melted cheese add a little bit of branston pickle but other than that all of the above also there's a yoghurt and mint sauce from home bargains that goes with anything

I love brown sauce! It has to be HP though.

Personally, my tastes vary. Salt and vinegar almost always, unless I'm having baked beans, then I won't. Ketchup if there's no brown sauce, and sometimes, cheese and beans if I'm feeling like stuffing myself.
