Perfect Omelette..

Can anyone beat my perfect omelette recipe?....

Eggs,onions,shrooms,chorizo & cheese..mmmmmmm

Sounds nice but I'm not too keen on eggs, I'll try it without the eggs and see what I end up with.. probably a fry up.

Chopped walnuts would make for an interesting addition. Replace the chorizo (one of my favourite meats actually).

How would you make it?

I would separate the egg yokes from the egg whites. Chopped up the chorizo, mushroom, onions, garlic and fry them up in a pan. Allow to cool before adding to the beaten egg yokes.

I would then snip some parsley and sping onions up, to be added to the egg mixture later.

At this point, I would heat up the grill.

I would then whip up the egg white until it forms stiff peaks, and then fold in the egg yoke mixture, grated mature Cheddar, spring onion and parsley, add salt and pepper to taste.

The egg mixture will then be poured into a large frying pan that can go under the grill, and place it on the hop and cook the underside of the omelette first.

I would then add some grated Parmesan cheese on the top of the omelette, extra parsley and spring onion, and grill under the grill until done.

If all goes well, it should rise up a bit and end up as a very fluffy yummy omelette!

The irony is that all this food talk makes me hungry, however, I don't want to eat too much as I'll be having lunch with my playmate at 12:45h.

Just my normal creamy coffee with lots of sugar will have to do for now, may be some cold meat from the fridge too.

for me eggs grated cheese salt pepper whisk it all up..oill and butter in the pan smoking hot pour in the eggggs move them round a bit till just set then flip over and turn onto plate takes about 30seconds to cook ....in fact i might just do one now !!!

Normally I would have scrambled egg, Chinese way, 2-3 eggs beaten with a dash of oil, salt and pepper, heat up a pan until smoking hot, dash of corn oil, add chopped garlic, pour in the egg, swirl a bit until just cooked, bingo.

Making a Spanish inspired omelette is a party piece, and I have not done it for yonks!

The last twice ive had an omelette ive been violently sick. Both times i had them in cafes and i think they may have used powdered egg
