Not sure if I understand the question - but here is a way to cook chips that is a fuck of a lot better than the stodge you get from Chippies.
1)Skin and slice your potatoes, then Leave them to soak in a bowl of water for 10 minutes or so, then rinse.
2) fry at 150 degrees for 6 minutes.
3) take out and leave for a minimum 2 hours.
4) fry at 190 degrees for 3 minutes.
Kerching, perfect chips.

Hello all,
chips are a science and must be deep fried. Chip shop chips are always soggy and not crisp. If I'm organised I will cut and boil the chips until tender, freeze them and then deep fry at 180 degrees C. If pushed then the double fry, lowish temperature first until they are tender. Cool and fry at 180 degrees C.
Heston Blumenthall goes even further but I can't be bothered. Food snob, guilty as charged?
