I've recently got into baking...basic suff, mainly. Amazed at things I didn't know...

Mayonnaise in banana cake? who'd have thought! [and a fair bit of it as well according to the recipe in Times today]

It's in the oven now, so who knows how that will turn out...

Any easyish things you would suggest? All welcome

Was in Times paper today...saw it in cafe as I don't like to give Rupert Murdoch money!

Tore it out [was end of the day!] - will come back to the thread when it is done and let you know if it works!

On another thread I've just been singing the praises of the be-ro book. Just do a search for be-ro book and the page will come up telling you how to get one. It's 2.50 and tells you how to make pastry of all kinds, how to make cakes and lots of good reliable recipes that come out of the oven looking like the picture.

The brownie recipe and oatmeal raisin cookie recipe are easy to replicate and delicious

It came out really well...forst time for one of these for me...Some ingredients i didn't expect...her eis recipe as was requested...

3 ripe bananas [mash into a paste] I used 3 and half as they were quite small

220g light brown sugar

250g mayonnaise [!!!]

100g water of strong coffee [I used coffee...again surprised]

250g plain flour

10g bicarb soda

pinch of salt

sprinkle of demerara sugar on top

Basically mix it all up and 180/gas 4 for around 45 mins...keep an eye on it though of course. Loaf tim will work nicely...says use baking paper but I lightly greased mine with a little butter

You are welcome...please let me know how you get on...

Getting handy with a few things now and really enjoy it. I even have a baking cupboard full of the things I am likely to need. Sometimes I don't even recognise myself these days!

By the way, the mayonnaise I used was super light as that was all I had...seems okay though

That is on my list too...

One of the things that is good is recognising how much stuff goes into things...sugar, butter etc...makes you have a think about wolfing down slice after slice...and when you have made something nice you want to savour it and share it too.

haha...never started a thread before. Liberating!
