just been given some goose eggs...cooked duck eggs before, but any advice on goose eggs would be very welcome...

The tube of you is your friend.

Bear in mind,goose egg shell is quite tough to crack.

Friend of my has geese and she says they are quite strong tasting. Big enough to be a whole omelette !

She prefers to use in fruit cakes, as fruit flavours take over the egg

They make great cakes.

If you're not sure about quantity then weigh your eggs (in the shell) and use an equal weight of each butter, sugar and flour.

This is the traditional way to make a sponge cake no matter what size eggs you have available.

thats interesting..and odd! how do they know?...maybe something to do with weather patterns..im going to have to investigate that! but going to do my simnel cake first!
