When cutting an onion slice the bottom off and discard it straight away.. and point the cut part away from you or stand the onion on the cut... this helps reduce crying

If you buy fresh cut herbs and freeze them in their bags they don't lose flavour and can be used as and when you need them

A pinch of Mustard in your cheese sauce makes it extra cheesy

Put a wooden spoon across the top of the boiling pan and it won't boil over

Make sure its not the root end you cut off first, that's the "hairy" bit, as that's where the chemical is released that produces the fine "gas" that makes you cry

Once the egg is in don't let the water boil anymore - too much bubbling/seething water will reduce the white of slightly older eggs to that scummy foam so you get less egg.

There is an alternative method of poaching eggs if all else fails. Use a frying pan with a lid. Put and inch and a half of water in (from the kettle to save time) and bring to a boil. Once the first bubbles appear turn the heat as low as it will go.

Crack your eggs into a cup then slide into the barely simmering water.

After 1 minute turn the heat off and put the lid on. Leave for 10 minutes then serve.

If you like them less or more done adjust the time you leave them.

Foil is for covering and wrapping not for lining!

Get baking paper/parchment not greaseproof, it has a layer of silicone on it that makes it really non-stick.

If you need to bake a pastry case blind (ie without any filling) then cut some baking paper to size.then scrunch it up. Flatten it out again and it will be pliable enough to fit into all the corners easily. If you don't have any baking beans any dried beans or even rice will work - just keep separate after and don't try to cook the rice when you next have chilli!

Buy a slow cooker.

Put it on low before going to

work, when you get home

greeted by fab smell making

you hungry.

You can use cheaper cuts of meat

as slow cooking works better.

reduce liquid gravy to about a 1/3

as gives out lots of own juices.

Use a Leek rather than Onion less

fluids plus no tears

Always ALWAYS fry eggs on low heat. Nothing ruins an egg quicker than high heat (well, apart from throwing it into a brick wall :P )

Always use fresh eggs and at room temperature broken into an other vessel , as many as you like at one time, carefully slide eggs into deep pan of simmering water with a little white wine vinegar ( better taste and doesn't discolour ) after using a slotted spoon to create a swirling vortex. If the eggs old the albumen protein breaks down creating the spread. Chef professional tip. Perfect every time and simple.
