In your GoT example the ravens would be kept at say Winterfell, then when it's keeper deemed it recognised Winterfell as it's home it would be transported to King's Landing and kept there and released from King's Landing when they have a message for Winterfell.
Despite what they lead you to believe on TV and in the films the bird only goes one-way so a different one that sees King's Landing as it's home would take the return message from Winterfell.
The birds are then taken back to where their 'home' wants a quick message from. |

My Dad told me that when he was a child he took a homeing pigeon on a school trip to Dover and let it fly home from there

They do seek landmarks...
I do a bit of shooting and you've only got to watch them...they'll follow certain treelines say, then turn at the farm buildings and follow a road then turn off at another landmark say...
Couple mins later, more come along and take the same route...helps with the shooting if you can predict the flightpaths and figure out what good food sources lie under the flightpaths...all ya gotta do then is set your hide, set your decoys well and wait.....hopefully pidgeon for dinner that night |
