Leave the root on til the end. Cut the onion in half, take off the top, slice the onion from top to root then chop down to the root.
Was shown this on a cooking course and it does really work, at least when only chopping a few onions |

Thank you for the advice. I will purchase goggles for next time. As the chutney is for family and friends, I didn't mind shedding tears.Tears are made of1% water and 99% feelings. So my love for them is in abundance. x |

Don't cut the root off.
When you cut the basal plate (root) off, onions release an enzyme. That enzyme reacts in the rest of the onion to release a gas. When that gas combines with the water in your eye is creates an acid.
Also, try putting your chopping board on top of the cooker and turning the cooker hood on to full extract - it pulls the gas released straight up and away (obviously don't lean over the chopping board).
I use a mandoline for doing onions en-mass (such as when cooking Dopiaza) because its much quicker than by hand.

I saw Marco Pierre white cut an onion super thin on masterchef and he says the best way to stop your eyes watering is to do it without looking at the onion..
Think I would lose a couple of fingers if I tried that!! |
