i have a real phobia of where other people have been - handrails being the worst - indian takeaways used to have a bowl of bombay mix out - never could touch it = i have some anti-bacteria gel i use regularly |

Ref the peanuts in Bars, a study in the early 90's revealed that bowls of nuts on Bar tops, contained several strains of Uric acid and at high concentration levels too!
Plus, a lot of hotels these days will only put out a buffet for 4 hours before removing it, as it is considered past its "freshness" and safety levels beyond that time scale. |

Even when I have been to The Greenhouse on a buffet day, I always leave when it starts and go get scoff from the Spar round the corner.
I am intrigued by, but have never tried a potato dog they sell. Is that a midlands thing ? |

all depends on temprature and type of food (thats why they use the thermometer thingy)some foods can only stay out un chilled for a short time. even icecream in a freezer has to be chucked as it grows bugs too |

Trust me you will rarely ever find a chef wearing gloves and not touching the food they are cooking. To cook things right touch is as big a factor/indicator of how well its cooked as anything else. We are mostly scrupulously clean and people need to get over the fact chefs touch food !!!!: |

Whilst I wouldn't touch club food .........not right about the 2 hours statement I'm afraid. All sorts of rules about hot holding at 63 degrees and ambient holding .........think function buffets etc. |
