I've just been prepping my Sunday roast and it looks like I'm feeding an army!

This is because we'll planned leftovers will feed me for a lot of next week.

I'll have a roast chicken to cut at, possibly serve some warm with leftover veggies and gravy tomorrow. I'll strip the carcass so I've got plenty for sandwiches and salads then use the bones for stock to turn my leftover roast veggies into soup. Yum! It's good eats at mine this week

What do you do with your leftovers?

Keith is cooking roast pork for his Sunday lunch. He will chop some of the meat up to curry later. Some will be left for another roast lunch. He will re freeze what's left.

I, Claire am cooking beef some for today's lunch I'll leave some for next week to go with chips and a sandwich. The rest will be sliced and re frozen.

Things cost so much these days got to make the most of everything.

I don't have to worry. I will get to work later and there will be a roast dinner waiting for me. Im quite lucky as due to my shifts over the next week I will eat at work. Does save me quite a bit.

I cooked roast chicken for 6 today.. the works. .spuds, Sprouts, carrots, peas sweetcorn and spinach... tomorrow it will all be mashed up and baked to make bubble n squeak then served with two poached eggs..

the left over chicken will be made into a curry for tuesday yum yum xx

I always over cook and theres always enough left to portion up and freeze and have as easy meals when ive been working!!
