"Eggs Benedict Cut a muffin in half and lightly toast Place a slice of good home cut ham on top of each half Then a soft poached egg on each And cover in home made mayonnaise of a rich creamy yellow colour Sprinkle the top with paprika and serve while hot

Hollandaise not mayonnaise. Have yer seen the bloody price of that Hollandaise !! Its mayonnaise or brown sauce
