I'm looking to cook a stew tomorrow. Has anyone got any suggestions as to ingredients and what to do?
I was thinking of 3 kettles full of boiling water and a load of gravy mix in a huge pan, then all the veg and meat and letting it simmer for 3 hours. |

Think you might mess it up by putting 3 kettles in the pan, just put the water in. |

Chucking stuff in at the same time is never a good idea, meat needs sealing, and vegetables vary in cooking time.
Probably best to Google recipes, there are stew recipes from different food cultures. |

Putting the 'cum' in Eboracum |
Fry meat and chopped veggies for a while, then add a litre of stock, bring to the boil, then simmer until veg are cooked. Add the gravy granules at the end to thicken (about a tbsp). |

Get a slow cooker........ Fantastic!
Shin of beef, ( or brisket, both cheap!) leeks, potatoes, carrots, onion, a parsnip, tin of tomatoes, celery, a few mushrooms, salt and pepper, and a couple of beef stock cubes......
And if you like it a chillipepper......
Chop it all up roughly, bang it in with a small amount of water......
Leave it all day
Just before serving some gravy granules to thicken the gravy.........
Any nice ladies are welcome to come round to my house any time for dinner
( Guess what's for afters!)

I do mine in a slow cooker too.
Prepare everything after breakfast.
Brown stewing steak.
Chop up onion, potatoes, carrots and parsnips
Make up vegtable stock 500ml
Throw it all in the slow cooker on auto
Add black pepper, red wine vinegar, Worcester sauce and mixed herbs.
Give it a stir. It smells fantastic all day.
Then stir in corn flour in cold water to thicken 10 minutes before serving. We love it.

Boil meat for about 15 even if you have good meat it gets rid of the last of the fat.
Onion carrot and pearl barley, and any other veg to your preference.
Then add beef stock (or oxo) cornflour to thickening simmer for a few hours, preferably most of the day.
Dumplings.
Flour suet bind together with a little water touch of butter too if liked, pop in half an hour before stew is cooked.
Serve with mash or boiled potatoes or just pop into the stew.
And not forgetting crusty bread to mop it up.

Asda do dry packets for about 54p. I suggest to you the 'beef in ale' one. Its superb, I do att a knorr stock pot to it. has cooking instructions on the pack, I double up and freeze some, its even better defrosted |

Stew!
Before going out in morning...
Take out slow cooker pot, put in mixed herbs, chop veg and add, add meat of choice, add dessert spoon of mint sauce, cover with water and put on lid, place in slow cooker, turn on at low.
Go to work...
9/10Hrs later
Come home...
Open door, smell the loveliness!
Get bowl, ladle, spoon and pickled red cabbage. Take lid off slow cooker and fill bowl, add salt, pepper and cabbage...
Eat Stew! |

I also add whatever wine I have open, soy sauce, chilli vinegar (homemade) and sometimes a little cream to add extra taste 5 mins or so before eating.
To make chilli vinegar:
Go to supermarket buy big jar with rubber sealed top, buy white vinegar and chillies.
Chop Chillies up put in jar, add vinegar seal and leave chillies to pickle. Will be ready to use after a week or so...(use with care!) And top up every now and again with fresh vinegar. |

You are all wrong. Pressure cooker is the best way. Brown your meat, more color more flavour. Remove, brown onions, carrots with a bit of star anise. Deglaze with red wine and reduce by half, add the meat back, cover with beef stock. Put lid on, bring up to pressure and cook for 45 mins -1 hour. Release pressure, remove lid reduce sauce until it coats your spoon then finish with potatoes, turnips swede or whatever you want. Then chopped parsley before serving. |

One big problem with this method, it takes an hour and a bit to cook after you get home from work...

This is a nice chicken stew with herb dumplings.
12 skinless chicken pieces - a mixture of thighs and drumsticks on the bone, and halved chicken breasts
3 tbsp plain flour
2 tbsp sunflower oil
2 onions, sliced
2 carrots, diced
200g bacon lardons, smoked or unsmoked, or streaky rashers, snipped
3 bay leaves
3 sprigs thyme
bottle of cheap red wine
3 tbsp tomato paste
1 chicken stock cube
For the herby dumplings
140g cold butter, diced
250g self-raising flour
2 tbsp chopped mixed herbs - try parsley, thyme and sage or chives
If you want to use a slow cooker...
Use boneless chicken pieces as the meat becomes very tender and can leave chunks of stew in the stew. Flour the chicken as above. Heat the oil in a frying pan and brown the chicken in batches, followed by the lardons and onions. Transfer everything to the slow cooker along with the rest of the stew ingredients. Cover and cook on High for 4 hours. Make the dumplings as above and sit on top of the stew, cook for a further hour, then serve.
For normal oven .
1.Heat oven to 180C/160C fan/gas 4. Toss the chicken pieces with the flour and some salt and pepper, to coat them – it’s easy to do this in a plastic food bag.
2.Heat the oil in a casserole with a lid. Brown the chicken pieces well on all sides – you’ll need to do this in batches. Remove all the pieces to a plate, and tip the onions, carrot, lardons, bay and thyme into the pan. Cook gently for 10 mins until the onion is softened.
3.Return the chicken pieces, with any juices that have collected on the plate. Then pour in the red wine and tomato paste and crumble in the stock cube. Add a splash of water if you need, until the chicken is almost covered. Bring to the boil, then cover with a lid and bake in the oven for 20 mins. Remove the lid and bake for another 10 mins while you make the dumplings. Will feed 4/6 easy . Just need some nice mash on the side . x

"Update 6 oxo cubes"
That might be a little salty; taste and is the lamb soft; if it is heat off and leave it alone, bring back to a simmer before serving.
Generally, start with onions and garlic, brown meat (unless vegetarian), add whichever vegetables you want (cut size dependent on how long you have to cook), cabbage, spinach, mushrooms added 15 - 20 minutes before serving.
Minimal salt, lots of freshly ground black pepper, don't forget the herbs (thyme, rosemary, bay leaves, parsley) or bouquet garni (grow your own, easy), a good slug of wine and use stock cubes or bouillon rather than oxo.
Cheap cuts of meat are perfect; rabbit, shoulder, shin; cook long and slow 6 or 8 hours at 150C until the meat, simply, drops off the bone.
Finish with chopped parsley, and dumplings are easy to make!
Will be entirely happy to sit on the stove top until the following night, in a cold kitchen.

I've eaten many meals created by the deliciously deviant Doctor; he should be on MasterChef.
I've seen him at work; cooking 5 different mains for a party, at the same time, is impressive in a domestic kitchen, and that didn't include the sides and salads.

THE RESULTS
Sorry for the belated reply, but I was out last night and it was a late one.
It tasted FOUL. I couldn't eat it, it was that bad. I ended up giving some to the dog. He was sick and had the runs. I had a really bad stomach ache (plus a headache from getting woke up yesterday afternoon). Today I got rid of all that was left.
Never again! |
