i could live of stewing steak, carrot, se, onion, potato, leeks 2 oxo cubes and bisto gravy.. sooo simple but my god its just yummy
frozen peas last min and add dumplings for a treat |

Chicken and chickpeas
Chop garlic and some chorizo. Fry the chorizo till the oil runs then put in cooker. Fry garlic and onions in the chorizo oil. Put chicken thighs in oil to brown.
When brown put into cooker with onions and garlic. Add a pinch of chilli flakes and some paprika.
Add a can of drained chickpeas and a can of chopped tomatoes. Use a little extra water to swill out the tomato tin.
Then cook till done and serve with cous cous or rice or even just nice bread.
I have a small slow cooker so this fits perfectly with four chicken thighs and serves two. But it can be easily scaled up.
I do a great sausage casserole too, but it's worth browning the sausages first or they look like willies floating in stew!
It's also worth starting any garlic or onions off in a pan too though you don't have to.
Just remember that unlike a dish cooked in the oven or on the hob the juices are not going to reduce so don't put too much liquid in. |

Adding alcohol to a slow cooker can be tricky as the long gentle cooking doesn't always cook off the alcohol content which will affect the flavour - and not in a good way! |

Two things i wouldnt be without are my slow cooker and my 3 tiered steamer. I cook all sorts in it. One good thing is when i stick 2 frozen lamb shanks in it in the morning...leave them on low all day and turn off after about 6 hours...leave to go cold and the next day i roast them till all brown and tender...the meat falls off the bone.
They are excellent for curries and casseroles etc....

I always strain off the liquer and boil furiously and then its ok |

Yes , on slow and if its a good make ...they are perfectly safe as they use the same as a light bulb. Thats why they were invented really, so people could come home to a nice cook casserole/stew etc.
In the "sticks" some people still use "strawboxes" which work the same way |

I always like the idea of slow cooking but you end up having to precook a lot of the stuff before it goes into the pot most of the time that its just a load of hassle. |

got savoury mince in mine at the moment with meatballs having it with bubble and squeak mmmmm then strawberry blamange to finish with oh and a couple of bottles of cidre |

2 tablespoons butter
2 tablespoons vegetable oil
4 large skinless, boneless chicken thighs, cut into bite-sized pieces- i use fillets for ease
1 onion, diced
3 cloves garlic, minced
2 teaspoons curry powder
1 tablespoon curry paste
2 teaspoons tandoori masala or a tandoori spice blend
1 teaspoon garam masala
175g tomato puree-i use a lot less especially if its the double concentrated type
15 green cardamom pods- never bothered with them myself
1 (400ml) tin coconut milk
200g natural yoghurt- i add double for more sauce
salt to taste
Heat the butter and vegetable oil in a large frying pan over medium heat. Stir in the chicken, onion and garlic. Cook and stir until the onion has softened and turned translucent, about 10 minutes. Stir in the curry powder, curry paste, tandoori masala, garam masala and tomato puree until no lumps of tomato puree remain. Pour into the slow cooker, and stir in the cardamom pods, coconut milk and yoghurt. Season to taste with salt.
Cook on High 4 to 6 hours, or on Low 6 to 8 hours until the chicken is tender and the sauce has reduced to your desired consistency. Remove and discard the cardamom pods before serving.
Just be careful with the amount of puree, i followed this pretty much exactly the first time not realizing the puree i had was double concentrated!!

Buy a big bit of gammon, stick it in the slow cooker with a few quartered onions and pour over a bottle of . 7 hours later you have melt in the mouth ham. We've just had some leftovers for lunch. Nom nom xx |

That sounds so yummy , so how or what do you do with the gravy ? I take it you just crumble the oxo cubes ? Do you make the gravy up first ? |

That sounds so yummy , so how or what do you do with the gravy ? I take it you just crumble the oxo cubes ? Do you make the gravy up first ?"
I add stock cubes and water and strain at the end of cooking and thicken then , gravy granules work good |

When I add liquid to the slow cooker I use hot from the kettle. Dissolve stock cubes or gravy granules in it but make it a bit stronger than you would for a stew done in the oven or on the hob. |
