Been hickory smoking two racks of pork ribs since 3pm, St Louis style (coated in french mustard, then liberally rubbed with spices and brown sugar).

My uncle does the same he has a wood burning smoker in his outbuilding to do it and it tastes amazing. Hope its as good as his once its done. ![](/icons/thumb_up.png) |

They were oooffffin amazing lol been smoking for years. Started on beef jerky and salmon, then started following the deep south US bbq contests.
They were spicy hot, sweet, smokey and so tender they nearly fell right off the bone, just enough to get your teeth into :p |

Thx I use a Weber bbq grill. They have an ash can and vent underneath so you always get fresh air under the coals and there's also a decent vent on the lid, perfect for smoking while you grill.
Otherwise, if money weren't an object, I'd have a whole shed set up for smoking with cabinets and everything ![](/icons/s/mrgreen.gif) |

Next year when i get my own place I'm building a massive BBQ outside, with a little out door kitchen type thing around it (gonna cast the worktops myself out of decorative concrete) then it's just the furnace/foundry for ally/iron casting and a nice smoker shed before starting on saving for the machines for the workshop (might try my hand a building a lathe if i can get the furnace big enough to cast the bed) :p

Good luck with that and do your homework. You'll need wood for the pit too because that'll need a lot of fuel to cook in an open space.
I've planned a BBQ pit with someone before. It's an actual science lol |

Fire, meat, outdoors, eating LOL
