Christmas ham
Large leg of ham .
2 litres or cider .
Cloves
Blackcurrant jam for glazing .
Steep ham in water over night , changing water every few hours .
Boil ham in cider and handful of cloves
Remove from cider .
Score fat into diamonds add cloves
Warm jam up and brush ham every few hours
Do all this prep the day before then pour a pint of the left over cider over the ham , more Jam and baked till there's a caramelised crust on the ham
Slice and enjoy hot or cold
Everyone will want more Ham n Jam
Don't tell them who gave you the recipe as I'll have a stampede in co Antrim .

If cooking turkey , stuff the cavity with apple , orange and onion , keeps it moist. Well, as moist as you can expect from turkey.

Cut a large onion in half and stud with cloves.
Simmer till soft in either milk or a mix of milk and cream.
Remove the onion and add fresh bread crumbs till you get to your preferred consistency.
Season with salt and pepper, beat in a knob of proper butter and grate nutmeg over to serve.
For the breadcrumbs just save the ends of loaves allowing to dry out. Then blitz in the food processor or grate.
A variation is to reserve the onion, remove and discard the cloves then blitz in processor and add to sauce.
It's generally served as a thick dropping consistency like cake mix. |

You can save breadcrumbs by either drying them out in a very low oven and keeping in an airtight container or by freezing in a bag - I freeze so I don't have to worry about them going mouldy and you don't even need to defrost just use them straight from the freezer.
Bread sauce can be made in advance, just a little thinner, then either refridgerate or freeze.
Bring to room temp and heat in a pan stirring often. |

I brought 2 bags of fresh bread crumbs from waitrose and just froze them as I don't have a food processor...so thanks for the tips and recipes |

Let me know if you want any more. It's perfectly possible to cook Christmas dinner without boiling a single pan on Christmas day! All can be prepped in advance then finished off in the oven or microwave then all you're thinking about is the meat and the roasties. |
