Start off with a brand like Green and Blacks then if it's to your taste source other more specialist brands.
For the pallet I would suggest 65-70% dark (bitter), anything over 70% (extra bitter) is often better used in confectionary making and as an ingredient.
The darker the chocolate the more sugar has to be added to make it edible, 85% Green and Blacks for instance has sugar overload which can be unpleasant for many.

None of you are helping the poor male half here.
Jane, oh Jane, where are you with your chocolaty knowledge?
I'd recommend Montezuma, some of the Divine range, Willy's and a couple of others that I can't think of the names but can visualise the wrappers. |

"Montezuma is nice. Organic and Fairtrade too!
Montezuma is a great brand, their Lime and Chilli is very yummy.
But some of the Lidl dark chocolate is very nice too...."
Oh! There you are, I was just calling for you. |

Smoked Sea Salt Caramel in Milk Chocolate. Barack Obamas favourite chocolate bar that is. Although you can get them in different types of chocolate too. |

Montezuma's not bad. Hotel chocolate do some good single estate stuff. There's nothing wrong with Lindt, although their wasabi added stuff is a bit weird.
The higher the cocoa solids the more intense the flavour and satisfying I find it as well, so I eat a little less on each munch and it's not had some of the other effects.

the good lands, the bad lands, the any where you may want me lands |
The Grenada Chocolate Company chocolate is the best, founded by Mot Green in 1999, Mot sadly was tragically killed aged 47 last month whilst maintaining one of the companies machines. A great visionary for Grenada, the Coacoa bean and chocolate. I like the fact that they exported 30 tonnes of chocolate using a completely sustainable sailing ship which came into Portsmouth harbour earlier on this year!!! |
