Making a pot of fresh soup.......

Since i have plans to stay in this weekend and detox my liver i plan to put on my t slippers and smoking jacket and make a healthy winter warming pot of soup using fresh veg.
So come on peeps of FAB what ideas can you give me. I have a palate that loves garlic and spiciness so a simple recipe using those taste what can i add to the pot that can warm my blood and bones.
And this will be my first attempt at making soup

YOU CANNOT BEAT THE SPICY PARSNIP SOUP a la imalady
parsnips ...lots of
garlic lots of
onions lots of
Olive oil
CUMIN ( SEEDS OR POWDER)
coriander chopped fresh if possible ...
cut parsnips wash if very clean peel if dirty !!
chopp onions and garlic
sweat all in the oil in a large pot (pressure cooker is best ) till soft and squidgy
add cumin coriander salt pepper
add couple of litres of stock (chicken or veg stock cubes)
simmer till all veg is completely tender then whizz up in a blnder
defy u not to LURVE it !!! |

As a bloke who cooking ability is limited how do you sweat it. I have a pot but not a pressure cooker
We all have to start sometime and its a learning curve getting inspirations and ideas.

SOUP
1 each 3 cinnamon stick
6 each cloves
4 each black cardamom pods
1 tsp black peppercorns
2 each garlic cloves, chopped
1 each 2 piece ginger, grated
1 medium onion, coarsely chopped
1 cup potatoes, cubed
1 cup carrots, diced
1/2 cup green bell pepper
6 cup stock
SEASONING
1 tbsp olive oil
1 1/2 tsp black mustard seeds
1 tsp cumin seeds, whole
1 each dried red chile, chopped
1 salt
2 tbsp cilantro, chopped
Recipe Preparation
Using a mortar & pestle, crush the cinnamon stick, cloves, cardamom
pods & peppercorns. Set aside. In a soup pot, combine all the soup
ingredients with the crushed spices. Bring to a boil, reduce the heat
& simmer, covered, until the vegetables are very tender, about 25 to
35 minutes. Remove from the heat & cool for 10 minutes.
In batches if necessary, puree the stock & vegetables in a blender or
food processor. Return to a clean pot & reheat gently.
For the seasoning, warm the olive oil in a small skillet over medium
heat. When hot, put in the mustard seeds. After a few seconds, they
should pop. Add the cumin seeds & dried red chile & remove from the
heat. Add this mixture to the soup pot. Stir in the cilantro & salt.
Check the seasoning & serve hot.
NOTE: If you cannot find cilantro, use parsley. Use whatever
vegetables you like.
A couple of tablespoons of nuts cooked with the vegetables adds some
creaminess to the soup.

grecian, i couldnt cook till about 6 months ago.. missed my mum's home made soup..
logged on the tinternet for a mushroom soup with pics.......
it was really easy ...... and fab.
buy a blender tho.. lol

right lucky for you among my other tlents i am a trained chef !!!
sweating is simply bunging in the olive oil bunging in the veg and then cooking very gently until they have softened slighty..keep an eye on it and keep stirring cos u really dont want any burnt bits especially in a light coloured soup !! good luck

I suppose soup is one of those things you can throw anything in and it will come out tasty no matter what.
I moved into my own flat a year ago and i thought, right i have been getting fed with fresh products from either my folks or from my ex wife so i am going to continue eating healthy and not eat microwave or takeaway foods. It has been great cooking away and i have thoroughly enjoyed it and using my own intuitive as well.
Making soup is something i have wanted to try for a while and this cold weather spell has swayed it for me to make a pot.
And View just as well you said get a blender....cheers mate |

just be careful with the seaoning cos if u over season uve ruined a whole pot !!!!
i love my soup ... i live on it in the winter and its soooo cheap to make and lasts for days or freeze some too !!! |

I tend to leave everything just as it cooks 'cept mushroom soup which is much better blended down with a few bits of mushroom sprinkled on top. |

You cant beat Leek and potate soup or carrott soup. I adore home made soup with home made bread rolls. Blender is amsut but sooooooooooo worth it Good luck Grecian ! |

I make a lovely simple veg soup with a hint of heat.
Chop all the veg ya like and want in the soup.
Sweat your onions,garlic and celery for a few mins. i then add some chilli flakes,and some mixed herbs.
Add all other veg you want in it.
Just cover said veg with chicken stock and simmer till soft.
I then add some passata to this and keep simmering.
Add seasoning to taste.
And its normally lovely. |

I was going to suggest the parsnip soup imalady suggested, i also put half a teaspoon of garam masala in it.
Ive just defrosted the last of my chicken soup i made ages ago well its more like a cassorole its got chicken, mushrooms, butter beans and kidney beans in it. Im also just making a big pan of mince and onions with peas and carrots in thick gravy that will keep me goin |

Spicy Thai inspired carrot/parsnip/pumpkin soup are great!
Sweat some chopped garlic and onions while you chop up some carrots or parsnips in small chunks.
Sweat the chopped veg.
Depending on the quantity you are making, and how spicy hot you like your soups, add sufficient Thai red curry paste to the pot while you sweat the veg.
Add the stock and some coconut cream or milk and bring to boil, then simmer.
Instead of salt, use Fish Sauce to add some kick. Use palm sugar if you have it, otherwise brown sugar will do.
When veg is soft but still with a bit of bite, stick a blender into the pot and blend until smooth.
Add roughly chopped corriander, retaining some leaves for later. Blend some more.
Adjust seasoning to taste.
Serve in a bowl, with some fresh corriander leaves.
Plenty of bread/toast for dunking!

My fave and one of the easiest is ...
head of brocolli, broken into florets and simmered till tender in slightly salted water.
Blend till smooth and thats it really.
vibrant and green.
And you can add a swirl of cream or crema fraiche if wanted. and a touch of pepper

I forgot the following finish touches, sorry!!! And I forgot the chopped ginger to go with the chopped garlic, oh dear, sorry!!!
Toasted sesame oil and seeds, plus chopped spring onions!!!
Here's another one.
Broccoli and Stilton, use cream or creme friache instead of coconut milk, and parsley instead of corriander.
Definitely leave out the ginger for this, does not go with Stilton IMHO.
Liquidise the veg first before adding the crumbled cheese to the soup, let the cheese melt before adding the cream etc...
I still like adding toasted sesame seeds and oil and chopped spring oninions when I eat the soup. However, that's my personal preference. |

This one is easy, no liquidising involved.
White onions with cheese.
No ginger!
Sweet some finely chopped garlic, then sweet some onions cut into strips/rings and not finely chopped.
When the onions begin to go soft, add the stock, bring to boil and simmer.
Add grated cheese, using whatever cheese in the fridge.
Let the cheese melt, then add some cream or creme fraiche.
Adjust seasoning, add some chopped parsley when you are ready to serve with plenty of bread/toast for dunking again! |

This one I make at home in the evenings all the time.
Bear in mind I usually have a pot of stock on the boil which makes life a lot easier.
Chopped up some veg in small pieces, e.g. broccoli, sprouts, cabbage etc., put in a bowl, drizzle with a dash of oil, sprinkle with a pinch of salt, heat in microwave on high until soft enough for your liking.
Add drizzle of sesame oil, some sesame seeds, and snip some spring onions into the bowl. Add hot stock, stir, and a chunky bowl of vegetable soup, yum yum!
It can be made quite substantial by adding bits of meat like chicken/ham, and heat together with the veg in the microwave.
If starch is required, I like adding small pasta shapes for soups. However, that would require boiling the stock with the pasta in a separate pot which means an extra pot to wash up!

1kg spanish onions sliced in rings

Simmer till it smells delicious and the stock has reduced somewhat !!
serve in bowls with toasted cheesy french bread on top
this is a blue peter recipe i perfected with my kids 25 years ago they still ask me to make it for them when they visit....its FAB !! |

Mine is much the same but I add plain flour to the onions just as they finish sweating and mix in well. |

That is a useful tip for any batch cooking! And it saves money by cooking in bulk and freeze, IMHO! |

Tomorrow is the day i shall go for all my ingredients then the fun begins.
Practice makes perfect and i am so looking forward to it and telling you all how i got on.
What a change to my usual weekends of meeting the lads getting pissed and watching the football.
