Samphire Salad:
200 g samphire
50 g butter
15 ml olive oil
4 cloves garlic, finely sliced
1 large onion, finely sliced
125 g broad beans, lightly cooked and skinned
125 g peas, lightly cooked
125 g French beans, lightly cooked
50 ml white wine
1 pinches freshly ground black pepper

1. Wash the samphire in several changes of cold water. Place in a saucepan, cover with water and boil for 15-20 minutes, until soft. Drain and refresh in iced water.
2. Heat a pan and add the butter and the oil and cook the garlic and onion until softened but not browned and then stir in the broad beans, peas and French beans.
3. Add the wine vinegar and the samphire and cook for a few minutes. Transfer to a bowl. |

Contrary to popular belief its not a sea even though it predominantly grows by the sea dependant on the soil being right, a lot like asparagus. Very salty "sea" like taste this veg goes really well with most fish, use as a bed to serve the fish on, don't season with salt, compliments the fish perfectly as a natural flavour. |

In the style of Crispy Sea meets Crispy Shredded Beef :-
Deep Fried Crispy Samphire
150g samphire, trimmed, washed and dried
lemon wedges to serve
vegetable oil for deep-frying
For the batter
1 small egg
60g plain flour
pinch of cayenne pepper
about 100ml ice-cold water
First make the batter. Put the egg into a bowl and whisk a little to break it up. Add the flour and cayenne pepper and gently mix, then slowly add the iced water until you have formed a smooth batter.
Meanwhile, heat the vegetable oil in a deep-fat fryer or heavy-bottomed pan to 160°C. This is a bit messy: a handful at a time, put the samphire into the batter. Make sure all the stems are covered, then drain the excess off, letting the batter run through your fingers.
Carefully drop the samphire into the oil a few pieces at a time, stirring the oil with a slotted spoon to break the samphire up. When crispy, drain on some kitchen paper and repeat with the rest of the samphire. Serve with lemon wedges. |

I've just had the most delicious supper. I flash fried samphire with spring onions, leek and garlic, in butter. That was made even better with the addition of a smoked mackerel fillet and a lemon dressing.

Where are you getting it from. Tried various supermarkets round here but zilch. Have to try the market I suppose, get a couple of ducks or a rabbit while I am there. Damn....starving now! |

Tescos, believe it or not. Their 'finest' rage.
It's a short season so go for it. The market in Leicester (europes largest covered, apparently) only sells apples and onions in bowls now. Time was, you could get all sorts of unusual and tasty treats. Mind you, the fish and game they sell is astounding. |

It's a short season so go for it. The market in Leicester (europes largest covered, apparently) only sells apples and onions in bowls now. Time was, you could get all sorts of unusual and tasty treats. Mind you, the fish and game they sell is astounding."
