Come on people, ive done a co op too many reduced leeks purchase, and the ol leek and potato soup isnt cutting the mustard.

Can I do a french leek soup or something :d

Creamed leeks are lovely with roast chicken

Leeks

Onion

Cream

Thyme

Salt n pepper

Butter

Garlic

Oil

Splash Milk if too thick

(Optional - spinach)

Finely slice leeks, garlic and onions

Sautee on a low heat with oil and butter until very soft

Stir in thyme leaves and double cream and simmer slowly for 8-10 min

If it gets too thick add a splash of milk

Season to taste

Optional, at the end stir in a few handfulls of spinach.

Buy a lovely beef stroganoff and put a leek on the side plate. Eat the beef strog, then put the leek in the bin at the end.
