It’s all about the vinegar, preservative, content 👍🏽
Effectively nothing beside mayo and salad cream, due to egg content, needs to be kept in the fridge although ketchup does recommend storing in the fridge after opening 😁
However contrary to this I keep all condiments beside salt and pepper in my fridge 😉 |

You could also eat out at any well known restaurant to a burger van and you'll never find it in a fridge.
Has too many additives in it to make it go bad. |

Think about the air pressure differential.
Once you open it, the air gets in and contacts the sauce permanently. Lucky there are enough preservatives.
The container after the usual month, 2 or 3, could contain some undesirables. Is it a problem? Only microbiologists examining a selection in bad practice households (mainly children) would know the answer. There is probably an article or two online... |
