Chickpeas. Roasted with seasalt and paprika/pepper depending on the dish.

I also quite like flageolet beans with cassoulets and stews.

For Italian recipes with tomatoes or masalas I grate carrot, courgette, celery and I use 1/4 to 1/2 the meat and add an extra stock cube

One of my faves is a dhansak - mutton with red lentils and honey. You can also add coconut cream & pineapple juice and fruit just balance it out with extra cardamon and chillis.
