The library is lovely for a wander. The museum is so good but after 2 hrs my brain had melted - you need a lot of time I think!
Lots of nice food places. If it's dry, sitting outside down canal street is always a nice atmosphere  |

Food and drinks at Albert's Schloss.
A short tram journey to Salford Quays for a pleasant walk around there as its then a lovely day. While you're there, either bob into The Imperial War Museum or The Lowry.
Maybe a nice walk around Castlefield Viaduct Garden then having a walk around Castleford itself and stopping off for drinks at one of the many bars around there.

As people have mentioned, salford quays is an interesting / worthwhile visit..as is the chinatown area for food.
Depending on how long you're there for, you could also venture over to the Trafford centre..
