French toast:

3 eggs

3 egg whites

120ml Whole milk

Cinnamon

Vanilla extract (I use vanilla protein powder for the gainz)

4 slices of brioche bread

Top with syrup, strawberries and whipped cream for an indulgent breakfast

Crab linguine

Carlic, chillies, cherry tomatoes, crab, olives, chopped parsley, white wine.

Soften garlic and chillies in oil over low heat, add tomatoes cook a couple of minutes. Turn heat up add wine, reduce, add crab and olives. Meanwhile cook linguine and drain add to crab mixture and sprinkle with parsley.

Can use prawns instead.

This is a recipe I pinched from one of the threads on here and have made several times. As is a lamb recipe, I thought is very topical. There are lots of threads with excellent recipes. Might pinch a few more from several threads to add here. You keep adding your own, especially if someone likes what you mention in the What's for tea/dinner thread.

Lemon and herbs roast lamb and potatoes

INGREDIENTS:

A leg of lamb, 1 to 1.5 kilos of potatoes, 2 tbsp mustard, 2tbsp of honey, 4 tbsp good olive oil, 2tbsp oregano, zest and juice of 2 lemons, 2 to 3 cloves of garlic, a chicken stock tube, couple of rosemary sprigs (leaves only) and salt and pepper.

METHOD

Preheat the oven to 170°C. Cut the potatoes into chunky pieces, add to a dish and the lamb on top.

Beat all of the rest of the ingredients well in a blender to make a marinade and spread well on the lamb and the potatoes.

Add around 250g of water to the dish and cover with greaseproof paper and aluminum foil.

Bake for about 3 hours, then uncover and bake for a further 30 to 40 mins

Butternut squash, sweet potato and Apple soup.

One bag frozen butternut squash

One bag frozen sweet potato

One grated eating apple

Stock cubes

Seasoning to to taste

A grate of nutmeg and grate of ginger if you've got it.

Put everything in a saucepan with enough water to cover. Simmer until cooked. Blitz with blender. Serve with bread of choice.

Simple roast veg, chorizo and red lentil soup

Ingredients

1 sweet potato

1 small butternut squash

3 med carrots

3 red peppers

4 stalks celery

5 cloves garlic

1 red onion

1/2 chorizo ring

1.5L veg stock

1 cup red lentils

S+P

Method.

Dice all the veg and chorizo and stick in a deep roasting tray with a drizzle of olive oil. Roast for approx 45 mins @ 180° or until there is a little charring on the veg.

While the veg is cooking add the lentils and stock to a large pan, bring to the boil and simmer.

Add the cooked veggies and chorizo to the pan. Bring to the boil, simmer then blitz to desired consistency. Season to taste.

For a veggie version just swap the chorizo for a generous amount of paprika (hot, sweet, smoked) a little cayenne and some cumin to the veggies before roasting.

This, and another one that will post in a minute were also found on a previous thread. This is a really simple one.

FIG AND ROCKET SALAD

4 figs, quartered

2 tbsp maple syrup

3 tbsp olive oil

A couple of handfuls of rocket (arugula)

Half a block of Parmesan cheese or mature cheese of your choice

10-12 basil leaves

Salt and pepper

1. Place a layer of rocket and basil in the bottom of your dish

2. Add your figs

3. Crumble over large pieces of the Parmesan

4. Add salt and pepper.

5. Mix together the oil and maple syrup and drizzle over your salad

I have actually made this one which I also found in an archive thread. Delicious.

SPICY MEATBALLS

Sauce:

• 3 tbsps olive oil

• 1 choped onion

• 1 minced garlic clove

• A couple of bay leaves

• 1 tsp of allspice

• 2 tins of plum tomatoes or passata (800g total) and a tbsp of tomato paste ( squeeze the tomatoes and use juice only if you don't like seeds)

• 1/2 tsp red chili pepper flakes

• 1 tsp ground cumin

• 1 small glass of dry red wine

• 1 tsp sugar

• Salt and pepper to taste

Saute onions and garlic in the oil, put in the spices and stir for a couple of mins then add wine and let it evaporate, add rest of ingredients and simer for 20 mins. Add a little water if needed, if sauce too thick.

Meatballs:

• 800 g minced beef

• 1 onion chopped

• 3 garlic cloves minced

• 1 egg

• 2 tbsps oil

• 3 slices bread soaked in a little white wine

• 1/4 tsp ground allspice

• 1/4 tsp nutmeg

• 1 tsp cinammon

• 1/2 tsp paprika

• 2 tsps ground cumin

• Salt and pepper to taste

Mix together, leave to rest for 20 minutes. Shape into oblong or normal round balls, flour lightly and fry on medium heat in a bit of oil till light brown all around. Put side by side in an oven tray, cover with sause and bake for about 35minutes at 180°. Alternatively just add the meatballs to the sauce in the pan and cook on low/medium heat for 30 mins. Do this carefully so you don't break the meatballs.

You can serve with rice or pasta linguine.

Easy 15 min Italian dish always a winner.

1 jar sundried tomatoes

1 pack mixed olives

Finally chop the above and save the olive oil from both.

Boil spaghetti pasta drain once cooked.

Add your olive oil and sundries tomatoes plus mixed olives to a large pan.

Cook on low heat adding in your pasta cook for 5 minutes adding some salt and pepper.

Always a winner and quick and easy.

Chocolate digestives

Butter

Make biscuit base

In a bowl add condensed milk and cream. Begin whipping.

Squeeze limes and pour juice into cream and condensed milk. It will thicken up the mixture

Pour onto biscuit base and leave to set in fridge.

Spiced beef kofta with a cheese and chilli filling

Ingredients

750g beef mince

1 red pepper (finely diced)

1 med onion (finely diced)

2 spring onions (finely diced)

4 cloves garlic grated.

2 tsp cayenne pepper

1 tsp hot paprika

1 tsp smoked paprika

S+P

Cheddar cheese cut into 1cm cubes

Chilli flakes

Method

Squeeze all the diced veg through a muslin cloth to remove as much moisture as possible.

Add to the meat with the spices and mix well. Once mixed form into balls ~3 inches across.

Taking a meatball in one hand push the cheese into the middle of it, sprinkle some chilli flakes onto the cheese, then reform the ball eith the cheese fully encased, making it nice and compact.

Cook either in oven @180°C or on a BBQ. When the cheese starts to ooze out, they are done.

Fig and Goats Cheese Salad.

Ingredients.

Handful of rocket.

Handful of red baby gem lettuce leaves, chopped.

50g soft goats cheese

25g creme fraiche

Grated lemon zest

1 tsp fresh lemon juice

1 tbsp fresh mint leaves, finely shredded

4 figs, quartered

1 tbsp pomegranate seeds.

1 tbsp chopped pistachios

Method

Mix the goats cheese amd creme fraiche, adding the mint and lemon zest and juice.

Add the lettuce leaves to a bowl, then top with the cheese and rocket. Sprinkle on the chopped pistachio and pomegranate and add the figs.

Best cookies ever

Ginger and white chocolate cookies

Ingredients

125 g unsalted butter

175 g dark brown soft sugar (or light brown)

1 medium egg

1 tsp vanilla (optional!)

280 g plain flour

1 + 1/2 tsp ground ginger

1/2 tsp ground cinnamon

1/2 tsp ground nutmeg

1 + 1/2 tsp baking powder

1/2 tsp bicarbonate of soda

1/2 tsp sea salt

300 g white chocolate chips

Instructions

preheat your oven to 180C Fan, or 200C regular! If your oven runs hot, go for 160C-170c.

Add your unsalted butter and dark brown soft sugar to a bowl and beat together until creamy.

Add in your egg, and beat again. If using vanilla, add it in now!

Add in the plain flour, ground ginger, ground cinnamon, ground nutmeg, baking powder, bicarbonate of soda, and salt and beat until a cookie dough is formed!

Add in the chocolate chips and beat again until they're distributed well!

Rolled into balls roughly 8-10

Bake the cookies in the oven for 12-14 minutes.

Once baked, leave them to cool on the tray for at least 30 minutes, as they will continue to bake whilst cooling!

Trippa alla Romana

Ingredients

• 2.2 lb beef tripe cleaned

• 1 onion for pre-cooking the tripe

• 1 carrot for pre-cooking the tripe

• 1 rib celery for pre-cooking the tripe

• 1 onion chopped

• ½ carrot chopped

• 1 rib celery chopped

• 28 oz crushed tomatoes

• handful fresh mint minced

• 4 tbsp pecorino romano cheese finely grated

• ½ cup dry white wine

• 4 tbsp olive oil or as needed

• fresh chili peppers to taste

• fine salt to taste

• black pepper to taste

Boil it for 15 minutes in salted water onion, carrot and celery. Will remove the odour.

Sauté the chopped onion, carrot and celery over medium-low heat until the onions start to appear translucent.

Add the tripe to the vegetables and salt and pepper to taste. Cook for a few minutes over medium heat. 

Add a ½ cup of white wine. Stir, and cook until the wine has evaporated. 

Add crushed tomato and a 1 1/2 cups of water to the tripe. Bring the sauce to a boil. Add a handful of fresh mint and a pinch of salt. Cover and cook the tripe in the sauce over medium-low heat for 2 hours.

After the two hours, turn off the heat and add about 4 Tbs of freshly grated Pecorino Romano cheese. Stir to melt the cheese. 

Feel free to top with more pecorino when you serve the dish.

Ginger and lemongrass scallop salad. (1 serving)

4 large scallops (with roe)

1 inch chorizo (small diced)

1 stick lemongrass, roughly chopped and beaten with a rolling pin.

1 inch grated fresh ginger

2 tbsp olive oil.

3 tbsp butter

1 handful rocket

2 spring onions, finely chopped

2 birdseye chillis finely chopped.

Method

Separate the scallops from the row.

In a small frying pan, add 1 tbsp olive oil and add the chorizo. Cook until oil is released. Remove the chorizo, turn the heat down and sautée the roes in the chorizo oil.

In another pan add the rest of the oil, the butter, ginger and lemongrass. When the butter is bubbling add the scallops. Cook until caramelised, flip and cook the other side.

Place the rocket, spring onion and chilli on the plate, then add the scallops and roe on top. Sprinkle on the chorizo and spoon the butter from the pan over the scallops.
